Local Food Trucks Taking The Heat, Staying In Their Kitchen

Everyone is trying to beat the heat somehow but for some local businesses it's almost impossible.

"It's definitely the hottest place I've ever worked," said Robert Wilfong, the cook at Mouth Wide Open.

If we think it's hot outside, what about cooking over a grill and a fryer in a small truck?

"We do have an air conditioning unit but it is still very hot on the truck with our fryer and flat," said Mouth Wide Open owner Keshia Barnett.

Wilfong says mid-day, he's usually standing in 120 degree heat. On Thursday, it got up to 101 degrees with only half of one burner on.

Despite the heat and having to wait five or six minutes for their sliders, customers haven't died down the past week.

"Business has still been good," Barnett said "Haven't seen a decrease because of the heat and we're selling more drinks which is good. We could be standing outside the truck and people will just hand us some cash and grab a drink and keep moving."

The foot traffic helps the beverage boost but some people say on lunch break, they don't mind taking a short walk to the food truck. As long as they can eat the food in their office in air conditioning.

"Too much further from the office might have been too hot for that today," said Nathan Pace, who works on the downtown mall.

Mouth Wide Open has only been open since January so this is their first summer.

"We went through the cold months together now we're going through the warm months," said Wilfong. "We are definitely ready for fall."
