Pleasing Pairing: Food Truck and Brewery Partnership

On a cold winter night, how do a chicken and sausage gumbo and a local beer sound?

That's a pairing people could get Friday night while food truck Big Easy Metro Market was parked at the Champion Brewing Company.

"It's my livelihood. I've been a chef here in town for fifteen years now. So, I've always wanted to have my own restaurant. and this is the low overhead way of getting there," said Hiawatha Green, III, the owner and chef Big Easy Metro Market.

Both businesses are new. The food truck served its first shrimp and grits in September and the brewery started a little over a year ago.

"It's fun," said Green's son Logan, who helps his dad out sometimes. "I usually take orders and give em to my dad. And then he fixes the food."

"He's paying attention. More than I realized," said Green.

Also helping Green's food truck is his regular stops at Champion brewery.

"It's a very healthy, symbiotic relationship between the trucks and the brewery," said James Walsh, a bartender at Champion Brewing Company.

"Not a whole lot of of businesses in town that will do this for the food trucks," said Craig Rumpel, who got paired a fish and chips with a Stick it in My Rye IPA.

"It's a great thing to have so we can eat here and drink here both," said Brent Jacques, who got a chicken and sausage gumbo.

"Everybody just focuses on what they're really good at. And therefore, each individual product is better and people get excited when the come together," said Walsh.

"They've been real welcoming and that's been good for me because change is sometimes hard for me, that adjustment and this has been a good experience, to get the experience."

Green hopes to build more relationships, with local offices and businesses at lunch, and with other food truck owners.

He thinks family roots helped instill a passion for Louisiana cooking that will keep his food truck running.

"I remember growing up, gumbo, it's not just Dad fixing dinner. Gumbo, like, it was an event. Dad's fixing gumbo, the neiighbors are coming, family, real informal, but that;s what I embraced about it, the fellowship of it all. And that's what I love. I mean, it's my passion. it's in my heart. So, I know that it's gonna be successful. It's gonna take time but I'm gonna stick with it and just stay persistent."
