New FDA Ruling Could Have Negative Impact On Cheese Makers

A new ruling could have a negative impact on local cheese makers.

The food and drug administration has issued a ban on the centuries old practice of aging cheese on wooden boards.

This is a common practice among smaller local artisan businesses.

Feast cheese monger Sara Adduci says the changes the regulation could put many small cheese makers out of business by forcing them to alter their recipes and make major changes to their facilities.

"They would have to completely re-do their cheese caves, and have to have a renovation of their entire facility. For a small cheese maker it's not like they have extra thousands of dollars lying around to re-do their entire cheese making facility. So, for these smaller folks, it’s hard."

The FDA is concerned that the wood could contribute to the growth of pathogens and pose a health risk to consumers.
