Earth Day: Local Chef Lives A Green Lifestyle Everyday

Tucker Yoder is a chef at the Clifton Inn in Albemarle County.
and he believes that earth day isn't just on the 22nd of April, but it's everyday.

He emphasizes growing and making your own produce as well as living a healthy lifestyle.

"I think it's important to know what you're using and what goes into the things you make and use," says Yoder.

He explained some of the herbs, grown in the garden, that he uses in the kitchen

"Right now we have a lot of borage, salad burnet, and thyme," says Yoder. "We're growing, beets, peas, arugula, other lettuces, swiss chard, turnips, radishes, onions, garlic, lots."

Not only does Chef Yoder use fresh herbs from the garden at the Clifton Inn, but he also uses that green lifestyle at home.

Yoder's wife explained how they create their own laundry detergent using baking soda and other washing soaps like borax.

"Use a cup of each and literally you put the lid back on, mix it around a little bit and you're done," says Colleen Yoder.

They also home school their children with one main focus of liviing green, which helps when they have to eat their vegetables.

"It really helps with the garden and everything to know where things come from," says Yoder. "They are more willing to eat the things they have grown or seen the process and understand where things come from, they don't just come from a grocery store shelf."

The yoder's have been growing their own food for 10 years and hope to encourage others to do the same.

Chef Yoder explained that being able to go out first thing in the morning and grab some kale from the garden and putting it in your eggs in the morning is a nice feeling.
